Greek Quinoa Salad

Nutritional Note

Quinoa has the highest protein content of any grain and is rich in amino acids. It is a wonderful food to build muscle and support tissue growth and repair. It's high in fiber, nutrient dense and full of minerals.

Ingredients

  • 4 cups water

  • 2 cup red quinoa

  • 4 cups grape tomatoes, halved or chopped tomatoes of choice

  • 2 cucumber, chopped (i used radish in this photo)

  • 1 cup pitted kalamata olives

  • 1/2 cup diced red onion or scallion

  • Sea salt and freshly ground black pepper, to taste

Dressing

  • 1/2 cup extra virgin olive oil

  • 4 tablespoons apple cider vinegar

  • 2 tablespoon fresh lemon juice

  • 2 teaspoon raw honey

  • 2 clove garlic, minced

  • 1 teaspoon dijon mustard

  • 2 teaspoon dried oregano

  • Sea salt and black pepper, to taste

  • Crushed red pepper (optional)

Directions:

  1. Using a strainer, rinse the quinoa under cold water. Add quinoa, water, and salt to a medium saucepan and bring to a boil over medium heat. Boil for 5 minutes. Turn the heat to low and simmer for about 15 minutes, or until water is absorbed. Remove from heat and fluff with a fork. Let quinoa cool to room temperature.

  2. Prepare the dressing by mixing ingredients in a separate bowl, whisk until blended.

  3. In a large bowl, combine quinoa, with salad ingredients.

  4. Drizzle the salad with dressing and toss to combine.

  5. Season with salt and pepper, to taste.

  6. Enjoy!
