Greek Quinoa Salad
Nutritional Note
Quinoa has the highest protein content of any grain and is rich in amino acids. It is a wonderful food to build muscle and support tissue growth and repair. It's high in fiber, nutrient dense and full of minerals.
Ingredients
4 cups water
2 cup red quinoa
4 cups grape tomatoes, halved or chopped tomatoes of choice
2 cucumber, chopped (i used radish in this photo)
1 cup pitted kalamata olives
1/2 cup diced red onion or scallion
Sea salt and freshly ground black pepper, to taste
Dressing
1/2 cup extra virgin olive oil
4 tablespoons apple cider vinegar
2 tablespoon fresh lemon juice
2 teaspoon raw honey
2 clove garlic, minced
1 teaspoon dijon mustard
2 teaspoon dried oregano
Sea salt and black pepper, to taste
Crushed red pepper (optional)
Directions:
Using a strainer, rinse the quinoa under cold water. Add quinoa, water, and salt to a medium saucepan and bring to a boil over medium heat. Boil for 5 minutes. Turn the heat to low and simmer for about 15 minutes, or until water is absorbed. Remove from heat and fluff with a fork. Let quinoa cool to room temperature.
Prepare the dressing by mixing ingredients in a separate bowl, whisk until blended.
In a large bowl, combine quinoa, with salad ingredients.
Drizzle the salad with dressing and toss to combine.
Season with salt and pepper, to taste.
