Kale and Brussels Sprouts Salad

Ingredients

  • 1 cup (60g) kale, chopped

  • 1 cup (90g)Brussels sprouts, shredded

  • ¼ cup (30g) almonds, sliced or crushed

  • 1 tablespoon olive oil

  • 1 tablespoon lemon juice

  • 1 clove garlic, minced

Directions

  1. Preheat the oven to 350°F.

  2. Spread the almonds on a baking sheet and toast them in the oven for 5-7 minutes or until golden brown.

  3. Combine the chopped kale and shredded Brussels sprouts in a large mixing bowl.

  4. Whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing in a separate small mixing bowl.

  5. Pour the dressing over the kale and Brussels sprouts and toss to coat evenly.

  6. Sprinkle the toasted almonds on top of the salad.

  7. Enjoy!
