Kale and Brussels Sprouts Salad

Ingredients
1 cup (60g) kale, chopped
1 cup (90g)Brussels sprouts, shredded
¼ cup (30g) almonds, sliced or crushed
1 tablespoon olive oil
1 tablespoon lemon juice
1 clove garlic, minced
Directions
Preheat the oven to 350°F.
Spread the almonds on a baking sheet and toast them in the oven for 5-7 minutes or until golden brown.
Combine the chopped kale and shredded Brussels sprouts in a large mixing bowl.
Whisk together the olive oil, lemon juice, minced garlic, salt, and pepper to make the dressing in a separate small mixing bowl.
Pour the dressing over the kale and Brussels sprouts and toss to coat evenly.
Sprinkle the toasted almonds on top of the salad.
