Sprouted Lentil Salad

Ingredients

The Salad

  • 2 cups sprouted lentils, steamed

  • 1 cucumber finely chopped

  • 1 tomato finely chopped

  • ½ red onion finely chopped

  • 1 jalapeno finely chopped

The Dressing

  • 1 tbsp. extra virgin olive oil

  • 1 tbsp. apple cider vinegar

  • 1 tsp. minced garlic

  • A pinch of sugar

  • Salt to taste

  • ½ tsp. ground pepper fresh

Toppings

  • Chopped mint

  • Chopped cilantro

Directions

  1. Soak and Sprout lentils 3 days prior to making this recipe!

  2. Steam the lentils for a few minutes using a steamer basket in a pot.

  3. Take out and cool in a large bowl.

  4. Add chopped cucumber, onion, tomato, and jalanpeno.

  5. Make the dressing.

  6. Pour over the mixed veggies and sprouted lentils, mixing well.

  7. Garnish with chopped mint and cilantro leaves.

  8. Enjoy!
