Sprouted Lentil Salad

Ingredients
The Salad
2 cups sprouted lentils, steamed
1 cucumber finely chopped
1 tomato finely chopped
½ red onion finely chopped
1 jalapeno finely chopped
The Dressing
1 tbsp. extra virgin olive oil
1 tbsp. apple cider vinegar
1 tsp. minced garlic
A pinch of sugar
Salt to taste
½ tsp. ground pepper fresh
Toppings
Chopped mint
Chopped cilantro
Directions
Soak and Sprout lentils 3 days prior to making this recipe!
Steam the lentils for a few minutes using a steamer basket in a pot.
Take out and cool in a large bowl.
Add chopped cucumber, onion, tomato, and jalanpeno.
Make the dressing.
Pour over the mixed veggies and sprouted lentils, mixing well.
Garnish with chopped mint and cilantro leaves.
