Thank you to everyone who came out on Sunday to The Waitsfield Inn

Thank you to everyone who came out on Sunday to The Waitsfield Inn.

Joyful Greens was a success!  I sold out of almost everything- soups, salads and juices!

The response I received?

This is delicious! Wow, beautiful!  Will you open a restaurant?  Are you doing this every weekend?  We need this in the Mad River Valley!  Thank you!!

Well, THANK YOU!  Thank you for your support, and for nourishing your body with organic, local, farm-grown foods!

Many of the garnishes for the soups and bread, like the chipotle sauce and the chimichurri are a labor of love from Small Step Farm’s gardens, our expanding family homestead.

The herbal teas are blended at my home apothecary, Sweet Fern Gardens. This is what I love to do when I find moments of quiet and creativity.  I am always open to custom blending herbs for your taste preferences and health needs.

The Red Lentil Coconut Curry and Chipotle Black Bean Soup were made with an adaptogen herbal broth- dandelion root, burdock root, astragalus, ginger, turmeric and more.

The Kale Caesar Salad Dressing has a base of soaked sunflower seeds.  The greens were organically grown and all the toppings, like the gomasio and olives, were top of the line quality for healthy fats and salts.  All food should taste delicious without the junk!

The juices were crafted with ultimate deliciousness in mind, but also in combinations that revitalize the body.

Food is Medicine.

Nature, plants, herbs and soil health is the heart of all I do - and my dream is to continue serving in this way - through food and coaching.
